Roadside Chicken Curry
Ingredients:
5 tomatoes
3 onions, white
5 cups ginger garlic paste
3 green chilies
1 fresh bunch coriander
1 fresh ginger
deeghi mirch powder or hot paprika powder
cinnamon stick
bay leaf
fenugreek leaves
smc garam masala
smc dhaniya jeera masala
1 whole chicken ,
- broken down as legs, thighs, boneless breast - cut medium dice
Process :
cut tomato + onion small dice or in chopper
in a pot add 5 tbsp oil / heat + add ginger / garlic paste + chili
saute for 8 minutes until garlic cooked
add onion cook for 10 minutes until onions light brown
add tomatoes cook 10 minutes until paste consistency
add 5 bay leaf + 2 cinnamon stick +
4 tbsp dhaniya jeera + 2 tbsp garam masala
add chicken except boneless pieces (these take less time to cook)
brown for 5 minutes
add 4 cups water + cook for 10 minutes covered
add boneless chicken pieces + cook 10 minutes
add 3 tbsp fresh chopped ginger + chili + cook 10 minutes
garnish with 5 tbsp fresh juliene coriander 2 tbsp ginger juliennw + 5 tbsp fenugreek leaves / kasoori methi
