Palak Paneer
The beloved spinach + paneer restaurant favourite.
Ingredients:
3 tomatoes
5 onions, white
4 Bunches Fresh Spinach
2 Fresh Garlic
1 Fresh Ginger
4 Fresh Chilies ( or 2 if you prefer mild)
100 ml Heavy Cream
454 gr Paneer
smc garam masala
smc dhaniya jeera masala
Process :
Prep
Blanch spinach in large pot and Drain + Lightly chop by hand or in processer
( optional in blanching water add 1x cinnamon, 1x bay leaf , 1 garlic clove, 5 peppercorns )
Cut paneer into Medium Dice cubes and lightly pan pry
The Curry
cut tomato + onion small dice or in chopper
in a pot add 5 tbsp oil / heat + add 4 tbsp fresh garliic sliced / 6tbsp ginger minced / 3 tbsp chili minced *tarka | ਤੜਕਾ*
saute for 8 minutes until garlic cooked
add onion cook for 10 minutes until onions light brown add tomatoes cook 10 minutes until paste consistency *Bhuno भूनो”
add blanched spinach
+ add 3 tbsp fresh chopped ginger + chili mix
+ add 3tbsp each of smc dhaniya jeera powder and 2 tbsp of smc garam masala
cook for 15 minutes cover
add sauteed paneer
Finish with 1 cup heavy cream
garnish with 5 tbsp fresh juliene coriander 2 tbsp ginger juliennw + 5 tbsp fenugreek leaves / kasoori methi
