Amchuri Bhindi
A tangy, savoury homestyle okra sabzi.
Ingredients:
908 GR Fresh Okra
1 Red Onion
4 tbsp Ginger Chili Mince
4 Tbsp Rajasthani Cumin
1 Tsp SMC Garam Masala
2 Tbsp SMC Dhaniya - Jeera Masala
1 Tbsp Sliced Ginger
2 Medium Sized Roma Tomato
1 tsp Turmeric
1 tsp Amchur ( Mango Powder)
2 tsp Anardhana
1 Bunch Cilantro juliene
Salt to taste
Process :
You can leave the okra whole by cutting it in half or you can cut slices to make rings. Cut the tomato into large quaters and fine dice the onion.
In a kadhai ( medium sized pan w/ handles ) fry the okra in oil and set it aside.
Put 2 tbsp oil and add 2 tbsp of cumin - it should sizzle but be careful not to burn. Than add 2 cups of fine julienne red onion. Cook for 2 minutes . Add 2 tbsp of Ginger Chili Mince, while onions are still firm. Add 2 cups of quartered tomato. Cooking for 5-7 minutes until onions and tomato start coming together , but tomato is still visible.
Add 2 tbsp julienne cilantro + 1 tsp turmeric & mix with tomato onion base
Add 1 tbsp julienne ginger + okra
On top of okra sprinkle 1 tsp Amchur, 1 tsp Anardhana, 2 tbsp Dhaniya Jeera, 1 tsp Garam Masala and toss
Garnish with tomato & julienne ginger
